How to Make One-Pan “Marry Me” Chicken Orzo
  1. Cut the chicken breasts into bite-sized cubes and pat them dry with a paper towel.
  2. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and sauté for about 2-3 minutes.
  3. Stir in the minced garlic, sun-dried tomatoes, Italian seasoning, paprika, kosher salt, and ground black pepper. Cook for an additional 3-4 minutes.
  4. Add the orzo and chicken broth. Stir, then cover and reduce heat. Cook for 12 minutes, stirring occasionally.
  5. Once orzo is tender, stir in the coconut milk or heavy cream and fresh spinach. Cook until spinach wilts.
  6. Remove from heat and stir in the Parmesan cheese until melted and creamy. Serve immediately.
