How to Make One-Pan “Marry Me” Chicken Orzo
- Cut the chicken breasts into bite-sized cubes and pat them dry with a paper towel.
- Heat olive oil in a large skillet over medium heat. Add the cubed chicken and sauté for about 2-3 minutes.
- Stir in the minced garlic, sun-dried tomatoes, Italian seasoning, paprika, kosher salt, and ground black pepper. Cook for an additional 3-4 minutes.
- Add the orzo and chicken broth. Stir, then cover and reduce heat. Cook for 12 minutes, stirring occasionally.
- Once orzo is tender, stir in the coconut milk or heavy cream and fresh spinach. Cook until spinach wilts.
- Remove from heat and stir in the Parmesan cheese until melted and creamy. Serve immediately.
