- In a medium bowl, combine peeled and chopped apples with light brown sugar, ground cinnamon, and ground ginger. Let this sit for about 10 minutes.
- In a large bowl, whisk together the large egg, white granulated sugar, vegetable oil, full-fat sour cream, and vanilla extract until smooth and creamy.
- In another bowl, whisk together all-purpose flour, baking soda, and kosher salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Gently fold in most of the apple mixture into the batter and pour it into a greased loaf pan, reserving some apples for topping.
- Bake at 350°F for 50-55 minutes or until a toothpick inserted comes out clean.
- Allow the bread to cool for at least 30 minutes before glazing with a mixture of powdered sugar, milk, and vanilla extract.
