Method
 

Directions
  1. In a medium bowl, combine peeled and chopped apples with light brown sugar, ground cinnamon, and ground ginger. Let this sit for about 10 minutes.
  2. In a large bowl, whisk together the large egg, white granulated sugar, vegetable oil, full-fat sour cream, and vanilla extract until smooth and creamy.
  3. In another bowl, whisk together all-purpose flour, baking soda, and kosher salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  4. Gently fold in most of the apple mixture into the batter and pour it into a greased loaf pan, reserving some apples for topping.
  5. Bake at 350°F for 50-55 minutes or until a toothpick inserted comes out clean.
  6. Allow the bread to cool for at least 30 minutes before glazing with a mixture of powdered sugar, milk, and vanilla extract.
