Method
 

Steps
  1. Preheat the oven to 350°F (175°C) and grease your 13"x9" baking pan.
  2. Whisk together the eggs, sour cream, milk, and shredded cheese until smooth and creamy.
  3. Cook the sausage and onion in a skillet over medium heat until browned.
  4. Combine the cooked sausage with the egg mixture, stirring well.
  5. Sauté the bell peppers in olive oil until tender, then add the spinach to wilt.
  6. Mix the sautéed peppers into the egg and sausage mixture.
  7. Pour the mixture into your greased baking pan and bake for 30-45 minutes.
