How to Make Easy Chicken Burrito Casserole
  1. Preheat the oven to 400°F (200°C).
  2. Combine the onion, red bell pepper, uncooked rice, fajita seasoning, and optional cayenne in a 9x13 inch baking dish.
  3. Whisk together the reduced sodium chicken broth, mild green chilies, tomato paste, and olive oil. Pour this mixture into the baking dish and stir well.
  4. Add the shredded chicken, black beans, and frozen corn, stirring until well combined.
  5. Cover the dish with aluminum foil and bake for 65-70 minutes, until the liquid is absorbed and the rice is tender.
  6. Uncover and sprinkle cheese on top. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and slightly golden.
  7. Cool for 5-10 minutes before serving. Garnish with cilantro, green onion, salsa, and avocado if desired.
