Ingredients

For the Chicken
  • 2 pounds Boneless, skinless chicken breasts
  • 1 medium Onion, finely diced Yellow or white onions preferred
  • 3 cloves Garlic, minced Fresh garlic for best flavor
For the Sauce
  • 1 cup Barbecue sauce High-quality or homemade recommended
  • 1/2 cup Chicken broth Vegetable broth or water can substitute
  • 1/4 cup Brown sugar Maple syrup can be used as an alternative
  • 1 teaspoon Smoked paprika Regular paprika can replace, but will lack smokiness
For Assembly
  • 6 pieces Sandwich buns Brioche or hamburger buns recommended; lettuce wraps for low-carb
  • Optional toppings Coleslaw, pickles, or red onions for added flavor

Equipment

  • Crockpot

Method

Preparation Steps
  1. Lay the boneless, skinless chicken breasts in the bottom of your crockpot, ensuring they’re evenly spread out for even cooking.
  2. Sprinkle the chicken with smoked paprika, brown sugar, salt, and black pepper; then layer the finely diced onion and minced garlic on top for added flavor.
  3. Pour in your favorite barbecue sauce and chicken broth, covering the chicken completely, and creating a flavorful sauce that will keep the meat moist.
  4. Set your crockpot to cook on low for 5-6 hours or high for 3-4 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F.
  5. Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken back to the pot, mixing it well with the sauce.
  6. Cook on low for another 15-20 minutes to allow those mouthwatering flavors to meld together beautifully.
  7. If desired, toast the sandwich buns, then spoon the BBQ chicken onto each bun and top with your choice of optional toppings.
