  1. Start by chopping your chicken thighs into bite-sized pieces and mincing the garlic. Have your veggies ready—slice bell peppers, cut broccoli into florets, and slice carrots into sticks.
  2. In a large bowl, combine chicken thighs with soy sauce, honey, and sesame oil. Toss everything together until the chicken is beautifully coated and full of flavor.
  3. Transfer the seasoned chicken into the crockpot and layer the garlic, onions, and your chosen veggies on top. Pour in the vegetable broth, ensuring everything is submerged.
  4. Cover the crockpot and cook on low for 5-6 hours or high for 3-4 hours, until the chicken is tender and flavors have melded perfectly together.
  5. Once done, stir well to mix the juices and vegetables. Taste and adjust the seasoning if desired, then serve hot over rice or noodles, garnished with sesame seeds.
