Ingredients
  

For the Casserole
  • 12 ounces Penne Pasta Can be swapped with ziti or rigatoni
  • 2 cups Cooked Chicken Shredded rotisserie chicken for speed
  • 1 tablespoon Italian Seasoning Use fresh herbs if available
  • 2 cups Mozzarella Cheese Divided
  • 1 cup Parmesan Cheese Divided
  • 1.5 jars Marinara Sauce Total 48 oz; homemade version recommended
For Garnish
  • 1 cup Chopped Basil Optional

  • large mixing bowl
  • pot for boiling pasta

Method
 

Steps
  1. Preheat the oven to 350°F.
  2. Boil the penne pasta according to package directions. Once al dente, drain and rinse under cool water.
  3. In a large mixing bowl, combine the cooked pasta, shredded chicken, Italian seasoning, ½ cup mozzarella, ½ cup Parmesan, and marinara sauce. Stir until blended.
  4. Spread the pasta mixture into a greased 9x13-inch casserole dish. Cover tightly with foil.
  5. Bake in the preheated oven for 30 minutes.
  6. Remove the foil, sprinkle remaining mozzarella and Parmesan, and bake for an additional 10 minutes.
  7. Sprinkle with fresh chopped basil before serving.
