Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken and taco seasoning, cooking for about 2-3 minutes until the chicken is browned and fragrant.
  3. Add chopped bell peppers into the skillet and continue to cook for an additional 2-3 minutes, allowing them to soften.
  4. Stir in salsa and cook for 2 more minutes. Then add cream cheese, mixing until melted.
  5. Mix in black beans and diced tomatoes until combined.
  6. Layer 1/3 of the chicken mixture in a baking dish, then top with two tortillas overlapping slightly. Follow with half of the remaining chicken mixture and a sprinkle of cheese.
  7. Repeat layering the remaining tortillas and chicken mixture, then finish off with the rest of the cheese on top.
  8. Cover the dish with foil and bake for 20 minutes. Then, uncover and bake for another 10-15 minutes, until the cheese is bubbly and golden brown.
  9. Serve immediately with condiments like Cholula sauce or green Tabasco.
  10. Optional: Garnish with fresh cilantro.

Notes
