Preparation
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add diced chicken and taco seasoning, cooking for about 2-3 minutes until the chicken is browned and fragrant.
- Add chopped bell peppers into the skillet and continue to cook for an additional 2-3 minutes, allowing them to soften.
- Stir in salsa and cook for 2 more minutes. Then add cream cheese, mixing until melted.
- Mix in black beans and diced tomatoes until combined.
- Layer 1/3 of the chicken mixture in a baking dish, then top with two tortillas overlapping slightly. Follow with half of the remaining chicken mixture and a sprinkle of cheese.
- Repeat layering the remaining tortillas and chicken mixture, then finish off with the rest of the cheese on top.
- Cover the dish with foil and bake for 20 minutes. Then, uncover and bake for another 10-15 minutes, until the cheese is bubbly and golden brown.
- Serve immediately with condiments like Cholula sauce or green Tabasco.
- Optional: Garnish with fresh cilantro.
