Ingredients
  

For the Sauce
  • 2 tablespoons Vegetable Oil Olive oil works well, adds rich flavor.
  • 1 medium Onion Diced.
  • 1 medium Red Bell Pepper Diced.
  • 1 medium Potato Chopped.
  • 2 cloves Garlic Minced.
  • 400 grams Crushed Tomatoes Fresh tomatoes can be used.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1 teaspoon Sugar To balance flavors.
  • 1 teaspoon Paprika For warmth.
  • 1 teaspoon Cumin Can substitute with chili powder.
For the Eggs
  • 4 Eggs Preferably at room temperature.
For Garnish
  • 1 bunch Fresh Cilantro or Parsley
  • 1 medium Sliced Avocado or Cheese Optional, Feta or Mozzarella suggested.

Method
 

Cooking Instructions
  1. Heat oil in a skillet over medium heat to prepare for sautéing vegetables.
  2. Sauté diced onion, red bell pepper, and chopped potato for 4-5 minutes until softened.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Pour in crushed tomatoes, adding salt, pepper, sugar, paprika, and cumin. Mix well.
  5. Lower heat, cover, and let the sauce simmer for 3-4 minutes.
  6. Create wells in the sauce and crack eggs into them, seasoning gently.
  7. Cover and cook on low heat for 5-8 minutes until whites are set and yolks are runny.
  8. Sprinkle with fresh cilantro or parsley before serving immediately.
