Preparation
- Preheat your oven to 350°F (175°C).
- Bake the chicken breasts in a large casserole dish with half of the teriyaki sauce for 20-25 minutes, or until cooked through.
- Cool and shred the chicken into bite-sized pieces.
- Combine the shredded chicken, cooked brown rice, frozen mixed vegetables, edamame, and the remaining teriyaki sauce in the same casserole dish.
- Bake again for an additional 15-20 minutes.
- Garnish with green onions if desired before serving.
