Ingredients
  

For the Meatballs
  • 1 lb ground chicken or turkey You can also use ground beef or lamb.
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
For the Tzatziki
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber, grated Make sure to squeeze out excess moisture.
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp pepper Adjust to taste.
For Assembly
  • 2 cups cooked rice (white or brown) You can use pre-cooked rice for convenience.
  • 1 cup fresh veggies (e.g., diced tomatoes and bell peppers) Use your choice of fresh vegetables.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground chicken or turkey, breadcrumbs, parsley, garlic, salt, and pepper until combined.
  3. Shape the mixture into one-inch meatballs and place on a parchment-lined baking sheet.
Cooking
  1. Bake meatballs for 20-25 minutes until golden brown.
  2. While meatballs bake, prepare tzatziki by mixing Greek yogurt, grated cucumber (squeezed dry), lemon juice, salt, and pepper in a bowl.
  3. Cook rice according to package instructions.
Assembly
  1. Assemble bowls with rice as the base topped with meatballs, fresh veggies, and tzatziki sauce.
