- Preheat the oven to 375°F (190°C). Lightly grease a 9-by-13-inch baking dish with butter or cooking spray.
- Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook for 7-9 minutes, breaking the meat into small pieces, until fully browned and cooked through.
- Add minced garlic to the skillet and cook for 1 additional minute. Drain excess grease and remove from heat.
- Wash and thinly slice Yukon Gold potatoes into uniform 1/8-inch rounds. Peel the potatoes first if desired.
- In a medium bowl, whisk together condensed cream of mushroom soup, sour cream, milk, paprika, garlic powder, onion powder, black pepper, and salt until smooth.
- Arrange half the sliced potatoes in the prepared baking dish. Layer with half the ground beef mixture, half the creamy sauce, and 3/4 cup shredded Colby Jack cheese.
- Repeat the layers with the remaining potatoes, ground beef, and creamy sauce. Reserve the remaining 1 1/4 cups cheese for the topping. Cover tightly with aluminum foil.
- Bake the covered casserole at 375°F for approximately 50-60 minutes. Check that the potatoes are fork-tender. Continue baking covered if the potatoes need additional cooking time.
- Remove the foil and sprinkle the remaining Colby Jack cheese evenly over the casserole. Bake uncovered for another 10-15 minutes, until the cheese melts and turns golden and bubbly.
- Remove the casserole from the oven and let it rest for approximately 10 minutes. Garnish with chopped fresh parsley and serve warm.
