Preparation
- Preheat the oven to 400°F and grease an 8x8 baking dish.
- Sauté butter and olive oil in a skillet over medium heat. Add garlic and onion, cooking until soft, about 2-3 minutes.
- Incorporate the sliced mushrooms into the skillet, stirring until they reduce, about 5-7 minutes.
- Add the diced carrot, frozen peas, and corn, cooking for an additional 5-7 minutes. Season with salt and pepper.
- Pour in half and half, followed by flour, stirring until the mixture thickens for about 2-3 minutes.
- Transfer the veggie mixture to the greased baking dish. Top with shredded cheese, then layer frozen tater tots evenly.
- Bake for 45-60 minutes, until the cheese is bubbly and tater tots turn golden brown.
