  • 1/4 cup All-Purpose Flour Gluten-free flour can be replaced
For the Cheesy Topping
  • 2 cups Sharp Cheddar Cheese Feel free to use mozzarella or vegan cheese
  • 32 ounces Frozen Tater Tots Homemade potato cubes can be a healthier substitute

Method
 

Preparation
  1. Preheat the oven to 400°F and grease an 8x8 baking dish.
  2. Sauté butter and olive oil in a skillet over medium heat. Add garlic and onion, cooking until soft, about 2-3 minutes.
  3. Incorporate the sliced mushrooms into the skillet, stirring until they reduce, about 5-7 minutes.
  4. Add the diced carrot, frozen peas, and corn, cooking for an additional 5-7 minutes. Season with salt and pepper.
  5. Pour in half and half, followed by flour, stirring until the mixture thickens for about 2-3 minutes.
  6. Transfer the veggie mixture to the greased baking dish. Top with shredded cheese, then layer frozen tater tots evenly.
  7. Bake for 45-60 minutes, until the cheese is bubbly and tater tots turn golden brown.
