Method
- Preheat the oven to 350°F (175°C). Lightly grease an 8-by-4-inch loaf pan and line with parchment paper, leaving overhang for easy removal.
- Blend the cottage cheese in a blender or food processor for 30–45 seconds until smooth. Add the eggs and olive oil and blend briefly until combined.
- Transfer the blended mixture to a large mixing bowl. Stir in the mozzarella cheese, Parmesan cheese, chopped fresh dill, and sliced green onions.
- In a separate bowl, whisk together the all-purpose flour, baking powder, garlic powder, onion powder, dried dill, salt, and black pepper.
- Gradually fold the dry ingredients into the wet mixture until a thick, slightly sticky batter forms. Avoid overmixing. Rest the batter for five minutes.
- Transfer the batter to the prepared loaf pan. Spread evenly and smooth the surface with a spatula.
- Combine melted butter, fresh dill, sesame seeds, and dried minced garlic in a small bowl. Brush over the batter, sprinkle with topping mozzarella and Parmesan, and press lightly.
- Bake on the center oven rack for 40–50 minutes until golden and firm in the center. A toothpick should come out without wet batter. If the topping browns too quickly, loosely cover with aluminum foil.
- Cool in the loaf pan for 15 minutes. Lift out using the parchment overhang and cool on a wire rack for another 20–30 minutes. Garnish with optional fresh dill and flaky sea salt, then slice into 8–10 pieces.
- Lightly toast individual slices in a toaster oven or skillet for crisp edges. Serve with cream cheese, avocado, scrambled eggs, smoked salmon, or other savory toppings.

Notes
Use an 8-by-4-inch loaf pan for the best loaf height. Blend cottage cheese until smooth and use low-moisture mozzarella to avoid excess liquid. Fold the flour mixture gently and avoid overmixing. Rest the batter for five minutes before baking. Bake until the center is firm, a toothpick comes out without wet batter, and the internal temperature reaches approximately 200–205°F. Cool for at least 35 minutes before slicing. Refrigerate in an airtight container for 3–4 days or freeze individual slices for up to two months for best quality. Nutrition values are estimates per slice based on eight slices.
