Method
- Preheat the oven to 375°F (190°C). Lightly grease an 8-by-4-inch loaf pan or line it with parchment paper, leaving an overhang on the sides for easy removal.
- Place 1 cup cottage cheese in a blender or food processor. Blend until smooth and creamy, scraping down the sides as necessary.
- Transfer the blended cottage cheese to a large mixing bowl. Add 2 large eggs and whisk until smooth and fully combined.
- Stir in 1 cup shredded mozzarella and 1/2 cup grated Parmesan cheese until evenly distributed.
- In a separate bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, 1 tablespoon dried minced onion, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, and 1/2 teaspoon salt.
- Gradually fold the flour mixture into the cottage cheese mixture. Stir gently with a wooden spoon or silicone spatula until a thick, slightly sticky batter forms. Avoid overmixing.
- If desired, fold in 1 tablespoon chopped fresh chives and 1 tablespoon everything bagel seasoning.
- Spoon the batter into the prepared loaf pan. Spread it evenly into the corners and smooth the top with a spatula.
- If desired, sprinkle 1 tablespoon everything bagel seasoning, 2 tablespoons shredded mozzarella, 1 tablespoon grated Parmesan, and 1 tablespoon dried minced onion over the top. Gently press the toppings into the batter.
- Place the loaf pan on the center oven rack and bake for approximately 35-45 minutes until golden brown, with firm edges and no wet batter on a toothpick inserted into the center.
- If the top begins browning too quickly, loosely cover the loaf with aluminum foil during the final 10 minutes. Continue baking until the center is fully cooked. An instant-read thermometer should register approximately 200°F in the center.
- Remove the loaf from the oven and allow it to cool in the pan for 10-15 minutes.
- Lift the bread out of the pan using the parchment paper overhang. Transfer to a wire rack and cool for another 15-20 minutes.
- Using a sharp serrated bread knife, cut the loaf into approximately 8-10 even slices. Divide into 10 slices for the estimated nutrition values.
- For a crispier bagel-style texture, toast individual slices in a toaster oven or a skillet over medium-low heat for approximately 2-3 minutes per side until lightly golden and warmed through.
- If desired, brush warm slices lightly with melted butter and garnish with chopped chives, extra Parmesan, or everything bagel seasoning. Serve with cream cheese, eggs, avocado, or savory sandwich fillings.
