Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan to prevent sticking.
  2. Melt butter in a medium pan over medium heat, then add chopped onion. Sauté until translucent, about 4-5 minutes.
  3. Add minced garlic and spring onions to the pan and sauté for 2 additional minutes.
  4. Sprinkle in dried thyme and flour, stirring well. Sauté for 1-2 minutes.
  5. Gradually pour in milk, stirring to combine and create a smooth mixture. Fold in sweet corn, cooking for 2 minutes.
  6. Stir in fresh herbs, grated cheddar, cream cheese, and salt until well mixed.
  7. Transfer the mixture to the greased baking dish. Top with remaining cheddar cheese and bake for 20 minutes.
