Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan to prevent sticking.
- Melt butter in a medium pan over medium heat, then add chopped onion. Sauté until translucent, about 4-5 minutes.
- Add minced garlic and spring onions to the pan and sauté for 2 additional minutes.
- Sprinkle in dried thyme and flour, stirring well. Sauté for 1-2 minutes.
- Gradually pour in milk, stirring to combine and create a smooth mixture. Fold in sweet corn, cooking for 2 minutes.
- Stir in fresh herbs, grated cheddar, cream cheese, and salt until well mixed.
- Transfer the mixture to the greased baking dish. Top with remaining cheddar cheese and bake for 20 minutes.
