Prepare the Muffins
- In a bowl, mix all-purpose flour, light brown sugar, cinnamon, and salt for the streusel. Cut in chilled unsalted butter until the mixture resembles coarse crumbs.
- Preheat your oven to 375°F (190°C) and line a muffin pan with cupcake liners.
- Using an electric mixer, beat the eggs and white sugar together. Gradually add the oil and vanilla extract while mixing.
