Directions

  2. In another bowl, whisk together the eggs and milk, then stir in the diced apples and vanilla extract until combined.
  3. Gently fold the wet mixture into the dry ingredients until just combined; avoid over-mixing.
  4. Heat the oil in a deep skillet or fryer over medium heat until it reaches 375°F (190°C).
  5. Drop spoonfuls of batter into the hot oil, frying each side for about 2-3 minutes until golden brown.
  6. Remove the fritters with a slotted spoon and drain on paper towels.
  7. Whisk together powdered sugar, milk, and vanilla extract in a bowl. Drizzle over warm fritters.
  8. Serve with vanilla ice cream if desired.
