Method
 

Main Instructions
  1. Slice the chicken breasts into bite-sized pieces and season with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and sear until golden and cooked through, about 5-7 minutes. Remove and set aside.
  3. Cook the cheese tortellini according to package instructions. Drain while reserving a little pasta water.
  4. In the same skillet, lower the heat and sauté minced garlic until fragrant, about 1 minute.
  5. Add milk and Velveeta cubes, stirring until the cheese melts and sauce is smooth.
  6. Return the chicken and cooked tortellini to the skillet, mixing until well-coated.
  7. Simmer for about 1 minute, then serve hot with garnish if desired.
