How to Make Crock Pot Bourbon Chicken
  1. Trim the chicken thighs of any excess fat and place them in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the light brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, red pepper flakes, and minced garlic until smooth.
  3. Pour the sauce mixture over the chicken thighs, ensuring every piece is coated evenly.
  4. Cover and set your slow cooker to high for 2-3 hours, or low for 4-6 hours until the chicken is tender.
  5. Once cooked, carefully remove the chicken from the slow cooker and chop or shred it as desired.
  6. Make a slurry by combining cornstarch and water in a small bowl and stir into the sauce in the slow cooker.
  7. Cover and let it cook for an additional 5-10 minutes until the sauce thickens to your preferred consistency.
  8. Finish with a sprinkle of sliced green onions before serving.
