  1. Prepare Caramel Sauce: In a saucepan, heat granulated sugar and water over medium heat. Stir until it turns golden brown, then add butter, cream, and vanilla. Let it cool slightly.
  2. Preheat Oven: Set your oven to 375°F. Line a baking sheet with parchment paper to catch any drips from the pie.
  3. Bake Apples: Toss your peeled and sliced apples in a bowl with granulated sugar and apple pie spice. Bake the mixture covered for about 35 minutes until the apples are tender. Allow them to cool.
  4. Assemble Pie: Roll out your crust and fit it into the deep dish or skillet. Brush with egg wash, then layer the cooled apples with caramel sauce and small pats of butter.
  5. Top Crust: Roll out the remaining dough and place it over the filling. Cut slits to create vents, brush with egg wash and heavy cream, and sprinkle turbinado sugar over the top.
  6. Bake: Place the assembled pie on the preheated baking sheet and bake for about 1 hour and 30 minutes until the crust is golden brown and the filling is bubbly.
