Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt butter in a small bowl, then mix in flour, sugar, cinnamon, and salt. Toast in the oven until golden brown, then let cool.
  3. In a large mixing bowl, cream together softened butter and sugars until light and fluffy. Add the egg, apple juice, and vanilla, beating until well combined.
  4. In a separate bowl, whisk together flour, spices, salt, baking soda, and baking powder. Gradually add to wet ingredients, stirring just until combined.
  5. Using a large cookie scoop, portion out the dough onto the prepared baking sheet, leaving space for spreading.
  6. Bake for about 12 minutes, until lightly golden and slightly underbaked in the center.
  7. Beat cream cheese and softened butter until creamy. Gradually mix in powdered sugar and caramel sauce until fluffy.
  8. Once cookies are cooled, frost each one and sprinkle with diced apple and crunchy streusel.
