Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt butter in a small bowl, then mix in flour, sugar, cinnamon, and salt. Toast in the oven until golden brown, then let cool.
- In a large mixing bowl, cream together softened butter and sugars until light and fluffy. Add the egg, apple juice, and vanilla, beating until well combined.
- In a separate bowl, whisk together flour, spices, salt, baking soda, and baking powder. Gradually add to wet ingredients, stirring just until combined.
- Using a large cookie scoop, portion out the dough onto the prepared baking sheet, leaving space for spreading.
- Bake for about 12 minutes, until lightly golden and slightly underbaked in the center.
- Beat cream cheese and softened butter until creamy. Gradually mix in powdered sugar and caramel sauce until fluffy.
- Once cookies are cooled, frost each one and sprinkle with diced apple and crunchy streusel.
