How to Make Lazy Day Oatmeal Cake
- Pour boiling water over oats in a bowl and let them sit for 20 minutes to soften.
- Combine the soaked oats with brown sugar, granulated sugar, melted butter, eggs, and vanilla extract. Mix until smooth.
- Stir in the flour, baking soda, spices, and salt until just combined.
- Pour the batter into a greased 9x13-inch baking pan. Bake at 350°F for 30-35 minutes or until a toothpick comes out clean.
- While the cake is baking, melt the topping butter in a saucepan with brown sugar, evaporated milk, and shredded coconut. Cook until bubbling.
