How to Make Lazy Day Oatmeal Cake
  1. Pour boiling water over oats in a bowl and let them sit for 20 minutes to soften.
  2. Combine the soaked oats with brown sugar, granulated sugar, melted butter, eggs, and vanilla extract. Mix until smooth.
  3. Stir in the flour, baking soda, spices, and salt until just combined.
  4. Pour the batter into a greased 9x13-inch baking pan. Bake at 350°F for 30-35 minutes or until a toothpick comes out clean.
  5. While the cake is baking, melt the topping butter in a saucepan with brown sugar, evaporated milk, and shredded coconut. Cook until bubbling.
  6. Once the cake is baked, pour the warm glaze over it, then broil for 2-3 minutes until the top is golden and bubbling.
