Preparation
- Preheat the oven to 300°F. Prepare a 9"x13" baking pan with cooking spray and line with parchment paper for easy removal later.
- Combine graham cracker crumbs and melted butter in a mixing bowl. Mix well and press into the bottom of the prepared pan to form a crust.
- Beat softened cream cheese in a stand mixer until fluffy; gradually add sugar. Add eggs, mixing well after each addition, and stir in vanilla extract.
- Pour half of the cream cheese mixture over the crust and spread evenly.
- Mix pumpkin puree and pumpkin pie spice into the remaining cream cheese filling. Pour over the vanilla layer, smoothing it out.
- Bake for 1 hour and 10 minutes. After baking, turn off the oven and leave the bars inside to cool with the door slightly ajar for about an hour.
- Chill the bars in the refrigerator for at least 3 hours before cutting into squares.
- Top each square with whipped cream and candy pumpkins right before serving.
