Method
 

Preparation
  1. Preheat the oven to 300°F. Prepare a 9"x13" baking pan with cooking spray and line with parchment paper for easy removal later.
  2. Combine graham cracker crumbs and melted butter in a mixing bowl. Mix well and press into the bottom of the prepared pan to form a crust.
  3. Beat softened cream cheese in a stand mixer until fluffy; gradually add sugar. Add eggs, mixing well after each addition, and stir in vanilla extract.
  4. Pour half of the cream cheese mixture over the crust and spread evenly.
  5. Mix pumpkin puree and pumpkin pie spice into the remaining cream cheese filling. Pour over the vanilla layer, smoothing it out.
  6. Bake for 1 hour and 10 minutes. After baking, turn off the oven and leave the bars inside to cool with the door slightly ajar for about an hour.
  7. Chill the bars in the refrigerator for at least 3 hours before cutting into squares.
  8. Top each square with whipped cream and candy pumpkins right before serving.
