- Preheat the oven to 300°F (150°C) and prepare a 9"x13" baking pan with cooking spray and parchment paper.
- Mix the crust ingredients by combining graham cracker crumbs with melted butter; press firmly into the bottom of the pan.
- Beat cream cheese until fluffy, add sugar and blend until just combined.
- Add eggs two at a time, mixing on low speed; add vanilla extract.
- Pour half of the cheesecake mixture over the crust and smooth it out.
- Combine remaining mixture with pumpkin puree and pumpkin pie spice, then pour over the vanilla layer.
- Bake for 1 hour and 10 minutes; cool in the oven with the door ajar for 1 hour.
- Chill in the refrigerator for at least 3 hours before cutting into squares.
- Top with whipped cream and a candy pumpkin before serving.
