  • 1 cup Pumpkin Puree Avoid using pumpkin pie filling.
  • 1 tsp Pumpkin Pie Spice Cinnamon or nutmeg can be swapped in.
For the Topping
  • 1 cup Whipped Cream Use homemade or thawed topping.
  • 12 pieces Candy Pumpkins Optional but recommended for presentation.

Method
 

Instructions
  1. Preheat the oven to 300°F (150°C) and prepare a 9"x13" baking pan with cooking spray and parchment paper.
  2. Mix the crust ingredients by combining graham cracker crumbs with melted butter; press firmly into the bottom of the pan.
  3. Beat cream cheese until fluffy, add sugar and blend until just combined.
  4. Add eggs two at a time, mixing on low speed; add vanilla extract.
  5. Pour half of the cheesecake mixture over the crust and smooth it out.
  6. Combine remaining mixture with pumpkin puree and pumpkin pie spice, then pour over the vanilla layer.
  7. Bake for 1 hour and 10 minutes; cool in the oven with the door ajar for 1 hour.
  8. Chill in the refrigerator for at least 3 hours before cutting into squares.
  9. Top with whipped cream and a candy pumpkin before serving.
