  • 1 teaspoon Dried Thyme
  • 2 leaves Bay Leaves
For the Vegetables
  • 1 pound Small Potatoes (halved)
  • 2 cups Carrots (chopped)
  • 8 ounces Mushrooms (quartered)
  • 1 cup Frozen Pearl Onions
For Garnishing
  • 1/4 cup Fresh Parsley

How to Make Slow Cooker Beef Bourguignon
  1. Trim excess fat and cut the stewing beef into 1-inch cubes.
  2. Mix flour, salt, and black pepper in a bowl. Toss beef in the mixture to coat.
  3. Heat olive oil in a skillet and brown the beef in batches, then transfer to the slow cooker.
  4. In the same skillet, sauté minced garlic and chopped onion until softened, then add to the slow cooker.
  5. Pour in beef broth, red wine, and tomato paste. Add dried thyme and bay leaves; stir to combine.
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender.
  7. Stir in potatoes, carrots, mushrooms, and pearl onions. Cook for an additional 1-2 hours.
  8. Discard bay leaves, adjust seasoning, and garnish with fresh parsley before serving.
