Making Quesadillas
- Core and thinly slice your apples, then toss them with freshly squeezed lemon juice, ground cinnamon, and brown sugar. Let this mixture sit for 10 minutes to let the flavors deepen and develop.
- Spread the softened cream cheese generously on one side of each tortilla. Add a heaping spoonful of the apple mixture followed by a sprinkle of shredded cheese, then fold each tortilla in half.
- Heat a skillet over medium heat and add the unsalted butter. Once melted, place the quesadillas in the skillet. Cook for about 2-3 minutes on each side until they are golden brown and the cheese is nice and melty.
