Ingredients

For the Filling
  • 2 cups Apples, thinly sliced Granny Smith or Honeycrisp recommended
  • 1 tablespoon Lemon Juice Freshly squeezed is preferred
  • 1 teaspoon Ground Cinnamon Substitute with apple pie spice for variation
  • 2 tablespoons Brown Sugar Can be replaced with maple syrup
For the Quesadillas
  • 8 oz Cream Cheese Softened for easy spreading
  • 4 large Flour Tortillas Whole wheat or gluten-free can be used
  • 1 cup Shredded Cheddar Cheese Low-fat cheese for a lighter option
  • 2 tablespoons Unsalted Butter Can substitute with olive oil

Equipment

  • Skillet

Method

Making Quesadillas
  1. Core and thinly slice your apples, then toss them with freshly squeezed lemon juice, ground cinnamon, and brown sugar. Let this mixture sit for 10 minutes to let the flavors deepen and develop.
  2. Spread the softened cream cheese generously on one side of each tortilla. Add a heaping spoonful of the apple mixture followed by a sprinkle of shredded cheese, then fold each tortilla in half.
  3. Heat a skillet over medium heat and add the unsalted butter. Once melted, place the quesadillas in the skillet. Cook for about 2-3 minutes on each side until they are golden brown and the cheese is nice and melty.
  4. Slice the quesadillas into wedges and serve warm, optionally topping them with chopped nuts or a dollop of whipped cream for a special touch.
  5. Drizzle with maple syrup for an extra layer of sweetness!

Try pairing with fresh fruit or yogurt for a balanced meal. Letting the apple mixture sit enhances the flavors.
