For the Filling
  • 2 cups Fresh blackberries Can use frozen but may need draining.
  • 1/2 cup Granulated sugar Adjust according to blackberry tartness.
  • 1 tablespoon Lemon juice Omit if a milder taste is preferred.
  • 1/2 cup Pistachios Can substitute with walnuts or almonds.
  • 1 teaspoon Vanilla extract Opt for pure vanilla for the best flavor.
For Dusting (optional)
  • 2 tablespoons Powdered sugar For a finishing touch before serving.

Method
 

Crust Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. Combine flour, oats, brown sugar, salt, and baking powder in a mixing bowl.
  3. Mix melted butter and vanilla extract in a separate bowl until fully combined.
  4. Incorporate the wet and dry ingredients, stirring until crumbly.
  5. Press about two-thirds of the mixture into the bottom of the lined baking dish.
Filling Preparation
  1. Toss fresh blackberries with granulated sugar and lemon juice in another bowl.
  2. Spread the blackberry mixture evenly over the pressed crust.
  3. Sprinkle the remaining crumb mixture and chopped pistachios on top.
Baking
  1. Bake for 30-35 minutes, or until golden and bubbly.
  2. Cool for 1 hour before slicing into squares.
  3. Dust with powdered sugar just prior to serving.
