For the Casserole
  • 1 head Cauliflower florets
  • 2 cups Chicken cooked, shredded
  • 1 cup Heavy Cream or coconut cream
  • 4 oz Brie or Cream Cheese for creaminess
  • 1 cup Cheddar Cheese shredded
  • 1 cup Bacon crumbled, for topping
  • 1 tbsp Gelatin
  • 2 tbsp Bacon Fat or olive oil
  • 1 tsp Sea Salt adjust to taste
  • 1/2 tsp Black or White Pepper
  • 1/4 cup Green Onions chopped, for garnish

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Toss cauliflower florets and frozen cauliflower rice with bacon fat and salt in a roasting pan; roast for 30 minutes.
  3. Heat the heavy cream in a saucepan until it's hot but not boiling.
  4. Blend the hot cream with brie or cream cheese and a pinch of salt in a blender until smooth.
  5. Combine the roasted cauliflower, chicken, and creamy cheese sauce together in the roasting pan.
  6. Smooth the mixture flat, sprinkle with cheddar cheese, and return it to the oven for another 20 minutes.
  7. Garnish with crumbled bacon and chopped green onions; let it set for 15-20 minutes before serving.
