  • 1 cup BBQ Sauce opt for a low-sugar variety
  • 1 cup Enchilada Sauce homemade or store-bought
  • 3 lbs Just BARE Chicken Breasts or rotisserie chicken
  • 2 cups Sweet Potatoes can substitute with butternut squash
  • 8 oz Corn Tortillas gluten-free varieties available
  • 2 cups Shredded Cheese use any cheese blend or vegan alternatives
For the Aromatics
  • 2 tablespoons Olive Oil or avocado oil
  • 1 medium Red Onion or shallots
  • 3 cloves Garlic fresh preferred, garlic powder is fine
For the Seasoning
  • 1 teaspoon Cumin or chili powder
  • 1/4 cup Cilantro omit if desired

Method
 

How to Make Layered BBQ Chicken & Sweet Potato Enchilada Casserole
  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts in a baking pan, cover them with 1/4 cup of BBQ-enchilada sauce mixture, and bake for 20-25 minutes until cooked through.
  3. Heat olive oil in a skillet over medium heat, add garlic and red onion, cooking until fragrant, about 3-5 minutes.
  4. In a large mixing bowl, combine sautéed onions with enchilada sauce and diced sweet potatoes, then add shredded chicken, cumin, and cilantro, stirring to combine.
  5. Spread sauce in a baking dish, dip corn tortillas into the sauce, and layer them, followed by the chicken mixture. Repeat layers, finishing with sauce and cheese.
  6. Cover with foil and bake for 30-40 minutes until heated through and cheese is melted. Let cool slightly before serving.
