  • 2 cups Cauliflower Rice Frozen or fresh
  • 1 cup Celery Diced
  • 2 large Eggs Optional
  • 1 bunch Green Onions Sliced, white and green parts separate
  • 1/4 cup Cilantro Chopped
  • 1/2 cup Hot Sauce Adjust to taste
  • 1 cup Ranch Dressing Ensure Whole30 compliant
  • 1/4 cup Ghee Can substitute with butter or olive oil
  • 1 cup Coconut Milk Canned
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
For Garnishing
  • 1 medium Avocado Sliced
  • 1/4 cup Blue Cheese Optional

Method
 

Preparation Steps
  1. Season your chicken breasts with salt and pepper. Grill or pan-fry until fully cooked (about 6-8 minutes per side), then cool and dice.
  2. Preheat your oven to 350°F (175°C). Thaw if using frozen cauliflower rice.
  3. Slice green onions, keeping the white and green parts separate, and dice the celery finely.
  4. Melt ghee in a bowl, stir in hot sauce, ranch dressing, coconut milk, garlic powder, onion powder, salt, and pepper until blended.
  5. In a large bowl, combine diced chicken, cauliflower rice, half diced celery, chopped cilantro, and the egg if using. Fold in the sauce mixture.
  6. Pour the mixture into a baking dish, spreading it evenly. Bake for 30 minutes or until bubbly and golden.
  7. Garnish with blue cheese and reserved cilantro, and serve with avocado on the side.
