  • 1 pound Thin-Sliced Chicken Breasts substitute with rotisserie chicken for faster prep
  • 8 ounces Green Onion Cream Cheese dairy-free alternative can be used
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 2 cups Chicken Broth homemade or store-bought
  • 8 ounces Sliced Mushrooms use any variety you like
  • 4 cups Fresh Baby Spinach frozen spinach can work as a substitute
  • 1 tablespoon Weber Herb and Garlic Seasoning can use favorite dried herbs if unavailable
  • 1 cup Shredded Mozzarella Cheese can replace with other cheeses
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C) and lightly grease a 13x9-inch baking dish.
  2. Arrange the thin-sliced chicken breasts in a single layer in the baking dish. Sprinkle generously with salt, pepper, and Weber Herb and Garlic Seasoning.
  3. Sauté the sliced mushrooms in olive oil over medium heat until they become soft and fragrant, about 5 minutes.
  4. Layer the sautéed mushrooms and fresh spinach evenly over the seasoned chicken in the baking dish.
  5. Mix the green onion cream cheese, chicken broth, and a splash of olive oil in a bowl until smooth.
  6. Pour the creamy mixture evenly over the chicken, mushrooms, and spinach.
  7. Cover the baking dish loosely with foil and bake for 20 minutes.
  8. Remove the foil and continue baking for another 20 minutes.
  9. Top the casserole with shredded mozzarella cheese and return it to the oven for an additional 5-10 minutes.
  10. Serve hot and enjoy.
