- Preheat the oven to 375°F (190°C) and lightly grease a 13x9-inch baking dish.
- Arrange the thin-sliced chicken breasts in a single layer in the baking dish. Sprinkle generously with salt, pepper, and Weber Herb and Garlic Seasoning.
- Sauté the sliced mushrooms in olive oil over medium heat until they become soft and fragrant, about 5 minutes.
- Layer the sautéed mushrooms and fresh spinach evenly over the seasoned chicken in the baking dish.
- Mix the green onion cream cheese, chicken broth, and a splash of olive oil in a bowl until smooth.
- Pour the creamy mixture evenly over the chicken, mushrooms, and spinach.
- Cover the baking dish loosely with foil and bake for 20 minutes.
- Remove the foil and continue baking for another 20 minutes.
- Top the casserole with shredded mozzarella cheese and return it to the oven for an additional 5-10 minutes.
