Ingredients
  

For the Crust
  • 2 tbsp Olive Oil Can be swapped with melted butter for a richer taste.
  • 20 oz Refrigerated Shredded Hash Browns Ensure they're gluten-free.
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 can Olive Oil Cooking Spray
For the Filling
  • 3 cups Fresh Baby Spinach Can substitute with other greens.
  • 4 oz Cabot Sharp White Cheddar Cheese Shredded.
  • 6 oz Canadian Bacon Chopped, can substitute with leftover cooked ham.
  • 6 Large Eggs
  • 1/2 cup Fairlife 2% Milk Can substitute with whole milk or heavy cream.
  • 1 tbsp Dijon Mustard
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Pepper To taste.

Method
 

Main Instructions
  1. Preheat your oven to 375°F (190°C). Grease a deep dish pie plate with olive oil cooking spray.
  2. In a bowl, toss the refrigerated shredded hash browns with 2 tablespoons of olive oil (or melted butter). Press into the bottom and sides of the pie plate, then season with salt and pepper. Bake for 25 minutes until lightly golden.
  3. Spray a pan with olive oil and sauté 3 cups of fresh baby spinach until wilted. Add 6 oz of chopped Canadian bacon and cook for an additional minute, then remove from heat.
  4. Spread the spinach and ham mixture evenly over the warm crust and top with 4 oz of shredded cheddar cheese.
  5. In a bowl, whisk together 6 large eggs, 1/2 cup of Fairlife 2% milk, 1 tablespoon of Dijon mustard, paprika, onion powder, salt, and pepper. Mix until well combined.
  6. Pour the egg mixture over the layered ingredients in the crust. Bake for 25-30 minutes until set and golden brown. Let it cool for 5-10 minutes before slicing.
