Main Instructions
- Preheat your oven to 375°F (190°C). Grease a deep dish pie plate with olive oil cooking spray.
- In a bowl, toss the refrigerated shredded hash browns with 2 tablespoons of olive oil (or melted butter). Press into the bottom and sides of the pie plate, then season with salt and pepper. Bake for 25 minutes until lightly golden.
- Spray a pan with olive oil and sauté 3 cups of fresh baby spinach until wilted. Add 6 oz of chopped Canadian bacon and cook for an additional minute, then remove from heat.
- Spread the spinach and ham mixture evenly over the warm crust and top with 4 oz of shredded cheddar cheese.
- In a bowl, whisk together 6 large eggs, 1/2 cup of Fairlife 2% milk, 1 tablespoon of Dijon mustard, paprika, onion powder, salt, and pepper. Mix until well combined.
- Pour the egg mixture over the layered ingredients in the crust. Bake for 25-30 minutes until set and golden brown. Let it cool for 5-10 minutes before slicing.
