- Whisk together coconut cream, chicken broth, nutritional yeast, oregano, and starch until smooth.
- Chop sun-dried tomatoes after draining and blotting.
- Mix cooked chicken with chopped tomatoes and sauce mixture until evenly coated.
- Simmer and thicken the mixture for about 5 minutes.
- Serve hot over cauliflower rice or roasted veggies and garnish with basil if desired.
