- Preheat your oven to 325°F (163°C). Line 12 muffin cups with liners and lightly spray each liner with non-stick spray.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and brown sugar until thoroughly mixed. Press this mixture evenly into the base of each muffin liner to form a solid crust.
- Using a stand mixer, beat the cream cheese until smooth. Gradually add Greek yogurt, egg, caramel sauce, brown sugar, vanilla extract, and cinnamon; mix until fully combined.
- Peel, core, and dice the Granny Smith apples. In a separate bowl, coat them with a sprinkle of brown sugar and cinnamon.
- In another bowl, combine all-purpose flour, brown sugar, rolled oats, and cinnamon. Cut in softened butter until the mixture resembles a crumbly topping.
- Spoon the creamy cheesecake filling into each muffin liner. Layer in the spiced apple mixture, followed by the streusel topping.
- Place the cheesecakes in the preheated oven and bake for about 30 minutes, or until the centers are set.
- Remove from the oven and let them cool. Chill the cheesecakes in the refrigerator for at least 2 hours before serving.
