Method
 

Instructions
  1. Preheat your oven to 325°F (163°C). Line 12 muffin cups with liners and lightly spray each liner with non-stick spray.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and brown sugar until thoroughly mixed. Press this mixture evenly into the base of each muffin liner to form a solid crust.
  3. Using a stand mixer, beat the cream cheese until smooth. Gradually add Greek yogurt, egg, caramel sauce, brown sugar, vanilla extract, and cinnamon; mix until fully combined.
  4. Peel, core, and dice the Granny Smith apples. In a separate bowl, coat them with a sprinkle of brown sugar and cinnamon.
  5. In another bowl, combine all-purpose flour, brown sugar, rolled oats, and cinnamon. Cut in softened butter until the mixture resembles a crumbly topping.
  6. Spoon the creamy cheesecake filling into each muffin liner. Layer in the spiced apple mixture, followed by the streusel topping.
  7. Place the cheesecakes in the preheated oven and bake for about 30 minutes, or until the centers are set.
  8. Remove from the oven and let them cool. Chill the cheesecakes in the refrigerator for at least 2 hours before serving.
