How to Make Easy Peach and Raspberry Cobbler
  1. Preheat your oven to 160°C (fan) or 170°C (conventional).
  2. Slice your peaches into wedges and mix them with raspberries and caster sugar. Let sit before transferring to a baking dish.
  3. In a mixing bowl, whisk together plain flour, baking powder, and caster sugar. Rub in cold butter until resembling coarse crumbs, then add milk and mix until a soft dough forms.
  4. Spoon the cobbler topping over the fruit filling, allowing some fruit to peek through. Optionally sprinkle with demerara sugar and flaked almonds.
  5. Bake for 25-30 minutes or until the top is bubbling and golden brown.
