- Boil water in a pot, then add whole wheat couscous. Remove from heat and let it absorb for about 5 minutes until fluffy.
- Set your oven to 350°F (175°C). Grease a 2-quart baking dish with olive oil.
- In a large skillet, heat olive oil over medium. Add diced onions and cremini mushrooms, sautéing for 5-8 minutes until soft.
- Stir in tomato paste with your sautéed veggies. Then add baby spinach and cooked chicken, cooking for 2-3 minutes until the spinach wilts.
- Spread the cooked couscous evenly into the prepared dish. Pour over the tomato sauce, then layer the sautéed mixture. Top with mozzarella cheese.
- Cover the dish with foil and bake for 20-25 minutes, or until everything is heated through and the cheese is melted and bubbly.
