Method
 

Instructions
  1. Boil water in a pot, then add whole wheat couscous. Remove from heat and let it absorb for about 5 minutes until fluffy.
  2. Set your oven to 350°F (175°C). Grease a 2-quart baking dish with olive oil.
  3. In a large skillet, heat olive oil over medium. Add diced onions and cremini mushrooms, sautéing for 5-8 minutes until soft.
  4. Stir in tomato paste with your sautéed veggies. Then add baby spinach and cooked chicken, cooking for 2-3 minutes until the spinach wilts.
  5. Spread the cooked couscous evenly into the prepared dish. Pour over the tomato sauce, then layer the sautéed mixture. Top with mozzarella cheese.
  6. Cover the dish with foil and bake for 20-25 minutes, or until everything is heated through and the cheese is melted and bubbly.
