How to Make Potato and Ground Beef Casserole
- Preheat your oven to 350°F (176°C) and grease a 9"x11" casserole dish.
- Brown the beef by adding the ground beef and chopped onions to a skillet over medium heat.
- Microwave the potatoes for about 8 minutes, then slice into ¼-inch rounds.
- Combine the filling by mixing half of the Swiss cheese with the spinach, cottage cheese, minced garlic, salt, and eggs.
- Layer the casserole by placing half of the potato slices at the bottom of the greased dish.
- Top with remaining potatoes and drizzle the rest of the butter. Sprinkle any leftover Swiss cheese.
- Bake the casserole for 40-50 minutes, or until the potatoes are soft and bubbling.
- Garnish with chives or green onions before serving!
