  • 1 cup Sugar Can substitute half with brown sugar
  • 1/2 cup Cooking Oil Unsweetened applesauce can be used
  • 1 cup All-Purpose Flour Gluten-free flour can be substituted
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Cinnamon Additional spices can enhance flavor
For the Cream Cheese Frosting
  • 8 ounces Cream Cheese Softened for mixing
  • 1/2 cup Butter Unsalted recommended
  • 2 cups Powdered Sugar Sift before mixing
  • 1 teaspoon Vanilla Extract Pure vanilla preferred

Method
 

Preparing the Bars
  1. Preheat the oven to 350°F (175°C).
  2. Combine in a large bowl the beaten eggs, pumpkin puree, sugar, and cooking oil.
  3. Sift together the dry ingredients and gradually add to the wet mixture.
  4. Pour the batter into an ungreased 15x10-inch baking pan.
  5. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Cool the bars completely on a wire rack before frosting.
Making the Frosting
  1. In a bowl, beat together softened cream cheese and butter until smooth.
  2. Gradually add in sifted powdered sugar and vanilla extract, mixing until creamy.
