- Preheat Oven: Set your oven to 325°F.
- Prepare Baking Pan: Line an 8x8 or 9x9 baking pan with parchment paper.
- Make the Crust: Mix Biscoff crumbs, cane sugar, and melted butter until combined. Press into the pan and bake for 10 minutes.
- Prepare Streusel Topping: Mix oats, brown sugar, flour, and cinnamon. Blend in butter until crumbly, chill until needed.
- Mix Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one by one. Stir in vanilla, pumpkin, yogurt, and spices.
- Bake the Filling: Pour filling over the crust and bake for 25 minutes.
- Add Streusel: Sprinkle streusel on top and bake for an additional 25-30 minutes.
- Cool & Chill: Let cool on a wire rack for at least an hour, then refrigerate for 3 hours or overnight.
- Serve: Slice into squares and drizzle with brown butter glaze if desired.
