Ingredients
  

For the Crust
  • 2 cups Biscoff Cookie Crumbs Can substitute with ginger snaps or graham crackers.
  • 1/4 cup Cane Sugar
  • 1/2 cup Butter (melted)
For the Streusel Topping
  • 1 cup Old-Fashioned Rolled Oats
  • 1/2 cup Brown Sugar Light or dark sugar works.
  • 1 tsp Ground Cinnamon
  • 1/2 cup All-Purpose Flour
  • 1/4 tsp Kosher Salt
For the Cheesecake Filling
  • 16 oz Cream Cheese (full-fat)
  • 1 cup Granulated Sugar
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree Ensure it's pure and not pre-spiced filling.
  • 1/2 cup Plain Greek Yogurt Possible substitutes include plant-based yogurt or sour cream.
  • 1 tsp Ground Spices (cinnamon, cloves, nutmeg, ginger) Can use pumpkin pie spice as an alternative.

Method
 

Directions
  1. Preheat Oven: Set your oven to 325°F.
  2. Prepare Baking Pan: Line an 8x8 or 9x9 baking pan with parchment paper.
  3. Make the Crust: Mix Biscoff crumbs, cane sugar, and melted butter until combined. Press into the pan and bake for 10 minutes.
  4. Prepare Streusel Topping: Mix oats, brown sugar, flour, and cinnamon. Blend in butter until crumbly, chill until needed.
  5. Mix Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one by one. Stir in vanilla, pumpkin, yogurt, and spices.
  6. Bake the Filling: Pour filling over the crust and bake for 25 minutes.
  7. Add Streusel: Sprinkle streusel on top and bake for an additional 25-30 minutes.
  8. Cool & Chill: Let cool on a wire rack for at least an hour, then refrigerate for 3 hours or overnight.
  9. Serve: Slice into squares and drizzle with brown butter glaze if desired.
