- Slice the zucchini lengthwise into even strips. Sprinkle generously with salt and allow to sweat for about 15 minutes, then pat dry.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until soft. Add ground beef or turkey and cook until browned.
- Stir in the marinara sauce and let simmer for 10 minutes.
- In a mixing bowl, blend together cottage cheese, a large egg, and parmesan until smooth.
- Preheat your oven to 375°F (190°C).
- In a baking dish, add a thin layer of meat sauce, followed by zucchini slices, cheese mixture, and mozzarella. Repeat layers, finishing with marinara and mozzarella on top.
- Cover with foil and bake for 30 minutes. Then remove foil and broil for 3-5 minutes until bubbly and golden.
- Allow the lasagna to rest for 30 minutes before slicing.
