Method
 

Preparation
  1. Slice the zucchini lengthwise into even strips. Sprinkle generously with salt and allow to sweat for about 15 minutes, then pat dry.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until soft. Add ground beef or turkey and cook until browned.
  3. Stir in the marinara sauce and let simmer for 10 minutes.
  4. In a mixing bowl, blend together cottage cheese, a large egg, and parmesan until smooth.
  5. Preheat your oven to 375°F (190°C).
  6. In a baking dish, add a thin layer of meat sauce, followed by zucchini slices, cheese mixture, and mozzarella. Repeat layers, finishing with marinara and mozzarella on top.
  7. Cover with foil and bake for 30 minutes. Then remove foil and broil for 3-5 minutes until bubbly and golden.
  8. Allow the lasagna to rest for 30 minutes before slicing.
