- Combine sliced boneless chicken breasts with cornstarch, salt, and freshly ground black pepper in a bowl. Ensure each piece is evenly coated.
- Heat vegetable oil in a skillet over medium-high heat. Stir-fry the coated chicken for about 4-5 minutes, or until browned and cooked through. Remove and set aside.
- In the same skillet, add remaining oil, toss in onion and bell pepper, stir-frying for 2-3 minutes until softened. Add mushrooms and minced garlic, cooking for another 2-3 minutes.
- Whisk together soy sauce, oyster sauce, honey, rice vinegar, and a pinch of black pepper. Pour into the skillet with the chicken and heat through.
- Sprinkle chopped green onions over before serving. Enjoy hot over jasmine rice or noodles.
