How to Make Pumpkin Pie Pecan Bars
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the spelt flour, rolled oats, coconut sugar, cinnamon, and salt.
- Cut the cold butter into the dry ingredients until the mixture resembles small peas.
- In another bowl, whisk the eggs until frothy, then add pumpkin, maple syrup, pumpkin pie spice, and salt.
- Press half of the streusel mixture into the bottom of your prepared baking dish.
- Pour the pumpkin mixture over the crust, spreading it evenly.
- Crumble the remaining streusel on top and sprinkle with crushed pecans and coconut sugar.
- Bake for 50-60 minutes until the custard is set and the top is golden.
- Cool at room temperature, then refrigerate for at least an hour before cutting.
