How to Make Pumpkin Pie Pecan Bars
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the spelt flour, rolled oats, coconut sugar, cinnamon, and salt.
  3. Cut the cold butter into the dry ingredients until the mixture resembles small peas.
  4. In another bowl, whisk the eggs until frothy, then add pumpkin, maple syrup, pumpkin pie spice, and salt.
  5. Press half of the streusel mixture into the bottom of your prepared baking dish.
  6. Pour the pumpkin mixture over the crust, spreading it evenly.
  7. Crumble the remaining streusel on top and sprinkle with crushed pecans and coconut sugar.
  8. Bake for 50-60 minutes until the custard is set and the top is golden.
  9. Cool at room temperature, then refrigerate for at least an hour before cutting.
