How to Make The Dodo Banana Cream Cheese Pie
- Preheat your oven to 350°F (175°C).
- In a bowl, mix 2 cups of crushed graham crackers with 3 tablespoons of granulated sugar and 4 tablespoons of melted unsalted butter. Press into a 10x2 inch pie plate and bake for 10 minutes. Let cool.
- Combine 2 packages of cream cheese, 2 eggs, 1 cup of granulated sugar, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice in a mixing bowl. Blend until smooth and creamy.
- Pour the cheesecake mixture into the cooled crust. Bake for 30-40 minutes, or until set. Allow to cool completely in the fridge.
- In a saucepan, whisk together 3 cups of whole milk, 1 cup of granulated sugar, 1/4 cup + 1 tablespoon of cornstarch, and 1/4 teaspoon of salt over medium heat. Stir constantly until thickened. Temper the eggs by mixing with a small amount of hot milk, then stir back and cook until gently boiling. Stir in butter and vanilla extract before removing from heat.
- Whip 1 1/2 cups of heavy whipping cream until peaks form, then fold in 2 tablespoons of powdered sugar and refrigerate.
- For caramel sauce, combine 3/4 cup of brown sugar, 1/4 cup of water, and 1 teaspoon of lemon juice in a saucepan. Bring to a boil, then simmer for about 10 minutes. Stir in 1/3 cup of whipping cream, 2 tablespoons of butter, 1/2 teaspoon of vanilla extract, and a pinch of salt. Allow to cool.
- Layer sliced bananas on top of the cheesecake layer, pour the cooled custard over, and refrigerate for at least 6 hours.
- Before serving, top with whipped cream and drizzle with caramel sauce.
