Method
 

Preparation
  1. Combine olive oil, lemon juice, oregano, garlic, paprika, salt, and pepper in a mixing bowl.
  2. Add the boneless chicken to the marinade, ensuring it’s evenly coated. Allow to marinate for at least 15 minutes or up to 24 hours.
  3. Heat a skillet over medium heat, add a splash of olive oil, and cook the marinated chicken for 6-7 minutes per side until golden brown and reaches an internal temperature of 165°F (75°C).
  4. In a bowl, mix together Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper for tzatziki.
  5. Assemble bowls starting with a base of rice, quinoa, or cauliflower rice, topped with sliced chicken, cherry tomatoes, diced cucumber, red onion, olives, and crumbled feta.
