For the Crumb Topping
  • 1/2 cup Granulated Sugar Brown sugar can be used for deeper flavor
  • 1 cup Powdered Sugar Coconut powdered sugar can be a dairy-free option
  • 1/4 cup Apple Cider Substitute with water or milk if needed

Method
 

Directions
  1. Preheat oven to 350°F (175°C) and grease an 8-inch springform pan.
  2. In a bowl, combine flour, sugars, salt, cinnamon, and nutmeg. Pour in melted butter and vanilla, mixing until crumbly.
  3. In a large bowl, cream together melted butter and granulated sugar until light and fluffy, about 3-4 minutes. Add egg, vanilla, and sour cream, mixing until smooth.
  4. In another bowl, whisk together flour, baking soda, salt, and baking powder. Gently fold this into the wet ingredients until just combined.
  5. Spread half of the cake batter into the pan, add apple chunks, and top with crumb topping.
  6. Spread the remaining batter over the apples and top with the rest of the crumb topping.
  7. Bake for 40-50 minutes, checking for doneness with a toothpick.
  8. Mix powdered sugar with apple cider for glaze.
  9. Drizzle the glaze over the cake before serving.
