Method
 

Instructions
  1. Preheat the oven to 375°F.
  2. Bake the bacon on a cookie sheet for 10 minutes until crisp, then chop into bite-sized pieces.
  3. Sauté the potatoes in a skillet with oil, sprinkle with taco seasoning, and cook for 15-20 minutes until soft.
  4. Arrange the tortillas in a baking dish, standing them upright.
  5. Scramble the eggs over medium heat until just set, about 4-5 minutes.
  6. Fill each tortilla with the potato mixture, followed by the scrambled eggs and crispy bacon pieces.
  7. Top with Monterey Jack cheese.
  8. Bake the assembled tacos for another 10 minutes until the cheese melts.
