  • 1 cup Granulated sugar Brown sugar yields a deeper flavor
  • 1 large egg Can swap with a flax egg for vegan option
  • 1 tsp Vanilla extract Opt for pure vanilla for best taste
  • 1 cup Unsweetened applesauce Mashed banana can be used as substitute
  • 2 medium Honeycrisp or Gala apples (finely diced) Other sweet apple varieties are suitable
For the Glaze
  • 1 cup Powdered sugar Sift for a lump-free glaze
  • 1/4 cup Apple cider or juice Freshly pressed cider enhances the flavor

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and spray a baking sheet with nonstick cooking spray.
  2. Whisk together the flour, baking powder, salt, and cinnamon in a medium bowl.
  3. Combine the melted butter and sugar in a large bowl, then whisk in the egg, vanilla, and applesauce.
  4. Mix the dry ingredients into the wet ingredients gently until just combined, then fold in the diced apples.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake the fritters for 10 minutes, then turn on the broiler to high.
  7. Prepare the glaze by whisking together the powdered sugar and apple cider.
  8. Brush the glaze over the warm fritters.
  9. Broil the fritters for 2-4 minutes, keeping a close eye on them.
  10. Let sit for 15 minutes to allow the glaze to set before serving.
