  • 1 cup Sugar half white and half brown
  • 1/2 cup Cooking Oil or melted butter
  • 2 cups All-Purpose Flour gluten-free option available
  • 2 teaspoons Baking Powder essential for lift
  • 1 teaspoon Baking Soda combine with acid
  • 2 teaspoons Cinnamon or pumpkin pie spice
For the Frosting
  • 1 package (8 oz) Cream Cheese Frosting store-bought or homemade

Method
 

Batter Preparation
  1. In a large bowl, mix together the beaten eggs, pure pumpkin, sugar, and cooking oil until well combined.
  2. In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon until evenly mixed.
  3. Gradually fold the dry mixture into the wet ingredients until just blended.
  4. Pour the batter into an ungreased 15x10 inch baking pan, smoothing it out evenly. Bake at 350°F (175°C) for 25-30 minutes.
  5. Allow your pumpkin bars to cool completely in the pan before spreading the cream cheese frosting on top.
