John Wayne Casserole

Ingredients
  

Meat Layer
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 10 oz can diced tomatoes with green chilies (drained)
  • ½ cup chopped onion (optional) Adds great flavor
  • to taste Salt & pepper
Creamy Topping
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese (mixed into the topping)
Crust & Final Topping
  • 1 8-count can refrigerated biscuit dough
  • 1 cup shredded cheddar cheese (for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish.
Cook the Beef
  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Drain any grease and add taco seasoning and water. Simmer until thickened.
  3. Stir in tomatoes and onions. Cook another 2–3 minutes, then remove from heat.
Form the Biscuit Base
  1. Press the biscuit dough into the bottom of your baking dish, overlapping as needed to form a solid crust.
Assemble the Casserole
  1. Spoon the beef mixture over the biscuit layer.
  2. In a separate bowl, mix sour cream, mayo, and 1 cup of cheddar cheese.
  3. Spread this creamy mixture evenly over the beef layer.
  4. Sprinkle remaining cheddar cheese on top.
Bake
  1. Bake uncovered for 25–30 minutes, or until the cheese is bubbly and golden, and the biscuits are cooked through.
  2. Let rest 5 minutes before slicing and serving.
